Zurich has one of the better public viewing terraces in European aviation: a deck on the roof of Dock B, open to anyone, with an unobstructed view across the apron and the runways.
It is landside, which is the important part. You do not need a boarding pass, and if you are already airside you cannot reach it.

Practical points
Dress for it. It is a roof, exposed, several storeys up, next to an open airfield. It is colder than the terminal in every season and considerably colder in January.
Check the weather and the hours. The deck closes in severe conditions and its opening hours change with the season. Both are published on flughafen-zuerich.ch.
Allow for security if you are flying. Coming back from the deck means clearing security again. Do not do it ninety minutes before a long-haul departure from Dock E.
Bring a longer lens if that is your interest. The apron is close; the far runway is not.
