These are allowances rather than rules. Zurich is efficient and on a quiet Tuesday you may clear everything in twenty minutes — but the cost of being early is a coffee, and the cost of being late is a flight.

Terminal 1, 2 or 3
Your airline decides which. All three are next to each other landside; the boarding pass and the screens tell you.
Closes early
Typically well before departure and earlier than you expect for long-haul. Check your airline’s cut-off — it is the hardest deadline of the day.
One central control
Everyone passes the same screening. Liquids and electronics rules apply — see security.
Leaving Schengen only
Not needed for a flight within Schengen. Required for everything else, and it comes after security.
Shops and restaurants
The central concourse. Where you wait if the gate has not been called.
A, B or E
A and B are a walk. E needs the Skymetro — allow ten minutes rather than two.

For a departure before 08:00 from a ski resort, work backwards ruthlessly. A pickup that feels absurdly early in the evening feels reasonable when it is snowing on the pass.
Before you go airside

Delays and the night curfew
Zurich Airport operates under a night curfew: scheduled flights do not depart after 23:00, and the airport is closed to movements overnight. A late-evening departure that slips badly can therefore be cancelled rather than merely delayed — the aircraft cannot leave once the window closes.
If your flight is the last of the evening and it is running late, watch the board above rather than assuming it will simply go when it is ready.
Checking in the evening before
Some airlines let you check in and drop your bags up to 23 hours before departure, on site. You then arrive on the day with nothing to carry and walk straight to security. Worth it for an early departure you would otherwise reach at 04:30 with luggage, for a night at a hotel near the airport, or for a last day on the slopes that ski bags would otherwise rule out.
